Asian Simply Surimi Lettuce Cups
Ingredients
2 pkg (each 8 oz) Simply Surimi, Flake Style
1 cup cooked long-grain rice
1 large carrot, grated
1 red pepper, sliced
3 green onions, sliced
1/4 cup chopped fresh mint
1/4 cup chopped fresh coriander
3 tbsp lime juice
3 tbsp light soy sauce
2 tsp sesame oil
1/2 tsp Asian chili paste
1 clove garlic, minced
8 iceberg lettuce leaves
3/4 cup hoisin sauce
Directions
Toss together Simply Surimi, rice, carrot, red pepper, green onions, mint and coriander.
Whisk together lime juice, soy sauce, sesame oil, chili paste and garlic; drizzle over surimi mixture and toss until combined.
Divide mixture evenly among lettuce leaves. Serve with hoisin sauce for dipping.
