
Chinese-Style Cucumber Salad with Simply Surimi
Ingredients
1 pkg (12 oz) Simply Surimi, Flake Style
2 tbsp rice vinegar
2 tsp light soy sauce
2 tsp sesame oil
1 tsp granulated sugar
Pinch salt
2 cups very thinly sliced English cucumbers
2 green onions, thinly sliced
1 tbsp toasted sesame seeds
Directions
Whisk together rice vinegar, soy sauce, sesame oil, sugar and salt. Toss vinegar mixture with Simply Surimi, cucumbers and green onions. Garnish with sesame seeds.
Tips: For an extra kick, add one small minced Thai red chili pepper.
To ensure that the salad remains crisp, toss with dressing just before serving.
