Crustless Simply Surimi Quiche
Ingredients
1 pkg (12 oz) Simply Surimi, Flake Style
2 tbsp olive oil
1 onion, chopped
1 red pepper, chopped
1 medium zucchini, chopped
1 clove garlic, minced
6 eggs
1 cup milk
1/4 cup Parmesan cheese
1 tbsp Dijon mustard
2 tsp fresh chives
2 tsp fresh parsley
1/4 tsp salt and pepper
Directions
Preheat oven to 350°F. Heat oil in large skillet set over medium heat; cook onion, red pepper, zucchini and garlic for about 5 minutes or until softened. Set aside; let cool.
Meanwhile, whisk together eggs, milk, Parmesan, mustard, chives, parsley, salt and pepper. Arrange vegetables and Simply Surimi in greased deep-dish pie plate; pour egg mixture over top. Bake for 50 to 55 minutes or until egg is set and top is lightly browned.
Tip: For added kick, add a dash of your favorite hot sauce to egg mixture.
