Gluten Free Broccoli & Simply Surimi Fritters
1 pkg (12 oz) Simply Surimi, Flake style
3 cups small broccoli florets
1 cup shredded Cheddar cheese
2 eggs, lightly beaten
1/3 cup gluten-free flour mix
2 green onions, thinly sliced
2 tbsp olive oil, divided
1/2 cup plain yogurt
1 tbsp chopped fresh dill
2 tsp lemon juice
Pinch each salt and pepper
Herbed Yogurt: Whisk together yogurt, dill, lemon juice, salt and pepper; set aside.
Steam or boil broccoli until tender; let cool slightly. Mix together broccoli, Simply Surimi, cheese, eggs, gluten-free flour mix and green onions. Shape into eight 3 1/2-inch patties.
Heat 1 tbsp oil in large skillet set over medium heat. Working in batches, cook patties, turning once, for 8 to 10 minutes or until golden brown and crispy, adding remaining oil as needed. Serve with Herbed Yogurt.
Tip: Refrigerating the batter for an hour or so makes it easier to form into patties.
