Grilled Simply Surimi Stuffed Tomatoes
Ingredients
1 pkg (12 oz) Simply Surimi, Flake Style
16 large plum tomatoes
4 cups cubed toasted bread (about 1/2-inch/1 cm cubes)
1 cup crumbled goat cheese
1 cup grated Parmesan cheese, divided
4 tbsp each chopped fresh parsley and basil
2 tsp lemon juice
Directions
Cut thin slice from top of each tomato and discard; scoop out pulp (reserve pulp for another use if desired). Mix together bread cubes, Simply Surimi, goat cheese, 1/2 cup Parmesan, parsley, basil and lemon juice. Spoon mixture evenly into tomatoes; sprinkle with remaining Parmesan.Preheat grill to medium-high heat. Grill tomatoes, covered, for 5 to 7 minutes or until tomatoes are tender and heated through.
Tip: To serve as an appetizer, use smaller tomatoes.
Serves 8.
