Mediterranean Simply Surimi Lettuce Wraps
Ingredients
1 pkg (12 oz) Simply Surimi, Flake Style
1 1/4 cups prepared hummus
18 leaves Boston lettuce
1 cup diced tomato
1 cup diced cucumber
1/3 cup chopped black olives
1 cup crumbled feta cheese
Directions
Spoon hummus into lettuce leaves. Top evenly with Simply Surimi, tomato, cucumber and black olives. Sprinkle with feta cheese.
Tip: You can substitute another sturdy lettuce like romaine lettuce for Boston lettuce if desired.
