Savory Corn Muffins with Simply Surimi
Ingredients
1 pkg (12 oz) Simply Surimi, Stick Style
1 1/2 cups gluten-free flour mix
1 cup cornmeal
2 tbsp granulated sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp cayenne pepper
1 1/4 cups milk
1 cup cottage cheese
3/4 cup melted butter
1 egg
1 cup shredded Cheddar cheese
1/4 cup chopped green onions
Directions
Preheat oven to 400°F. Grease and line 12-cup muffin tin with paper liners. Cut Simply Surimi sticks into bite-size pieces. In large bowl, whisk together gluten-free flour mix, cornmeal, sugar, baking powder, baking soda, salt and cayenne pepper. In separate bowl, combine milk, cottage cheese, butter and egg; stir into cornmeal mixture just until combined. Stir in Cheddar and green onions. Spoon batter evenly into prepared muffin cups. Insert surimi pieces into top of each muffin. Bake for 18 to 20 minutes or until tops are golden brown and tester inserted in center of each muffin comes out clean. Transfer pan to cooling rack; let cool for 5 minutes. Transfer muffins directly to rack; let cool completely.
Tip: For a spicy kick, stir 1 tbsp chopped hot peppers into batter.
