Simply Surimi and Corn Nachos
1 pkg (12 oz) Simply Surimi, Flake Style
1 bag (8 oz) corn tortilla chips
1 cup corn kernels
1 cup diced red pepper
1 cup each shredded mozzarella and aged Cheddar cheese
3 green onions, sliced
Preheat broiler. Arrange tortilla chips on foil-lined baking sheet. Top with Simply Surimi, corn, red pepper and cheese. Broil for about 4 minutes or until cheese is melted. Sprinkle with green onions before serving.
Tip: To add a little heat, sprinkle chopped red chili peppers over the nachos.
