1 pkg (12 oz) Simply Surimi, Flake Style
3/4 cup plain yogurt
1 tbsp curry paste
2 tsp lemon juice
1/4 tsp each salt and pepper
1 pkg (12 oz) prepared broccoli slaw
1/2 cup chopped green onions
Whisk together yogurt, curry paste, lemon juice, salt and pepper. In bowl, combine Simply Surimi, broccoli slaw and green onions; toss with yogurt mixture. Refrigerate until serving.
Tip: Use yogurt with at least 2% fat in this recipe; non-fat yogurt makes the salad too watery.
