1 pkg (12 oz) Simply Surimi, Flake Style
2/3 cup brown rice
2 tbsp rice vinegar
2 tsp granulated sugar
4 sheets toasted nori, halved
16 asparagus spears, cooked
1 avocado, peeled, pitted and sliced into strips
Soy sauce, for serving
Cook rice according to package directions; fluff with fork. Whisk together vinegar, sugar and salt; stir into rice. Lay 1 nori sheet, shiny side down, on work surface. Place 1/4 cup rice on nori sheet; using wet hands, pat rice down slightly to cover half of the nori, leaving border all around.
Place 1/4 cup Simply Surimi, 2 asparagus spears and 2 strips of avocado diagonally over the rice. Roll up tightly into cone shape (creating a tapered end and an open end) to enclose filling. Lay roll seam-side down on plate. Repeat with remaining nori and fillings. Serve with soy sauce.
Tip: Try grilled green beans and julienned red pepper in place of the asparagus and avocado. Serves 4
