Simply Surimi Quesadillas
1 pkg (12 oz) Simply Surimi, Flake Style
2 cups shredded Cheddar cheese
1/2 cup finely chopped red pepper
1/4 cup finely chopped green onion
2 tsp Tex-Mex seasoning blend
4 large white or whole-wheat flour tortillas
1 tbsp vegetable oil
Toss together surimi, cheese, red pepper, green onion and Tex-Mex seasoning blend. Arrange tortillas on clean work surface; divide surimi mixture evenly over one-half of each tortilla. Fold over to enclose filling and create half-moon shape. Brush outsides with oil. Set large nonstick skillet over medium heat; in batches, cook quesadillas, turning once, for 5 to 6 minutes or until tortillas are golden brown and cheese is melted. Cut each quesadilla into 4 wedges. Serve with guacamole and salsa.
Tip: Make these quesadillas spicy by adding one seeded and finely chopped jalapeño pepper to the surimi mixture, and serve with hot sauce.
