1. Preheat oven to 400°F. Grease 24-cup nonstick mini muffin tin.
2. In large bowl, whisk together eggs, cheese, milk, salt, pepper, dill and chives. Pour into prepared muffin cups; top each with 1 tsp chopped surimi. Bake for 12 to 15 minutes or until set and golden on top.
3. Run thin knife carefully around edges to loosen and remove each quiche. Serve warm or cold.
Tip: Substitute your favorite cheese and herbs for the Cheddar cheese, dill and chives.
