1 pkg (12 oz) Simply Surimi, Stick Style
8 oz Manchego cheese, cut into 3/4-inch cubes
12 pitted Kalamata olives
12 cherry tomatoes
2/3 cup mayonnaise
1 tbsp sherry vinegar
1 tsp smoked paprika
Pinch each salt and pepper
Cut each Simply Surimi stick into 3 pieces to make 24 pieces total. Thread 2 pieces of surimi alternately with cheese, olives and cherry tomatoes onto twelve 4-inch skewers.
Dipping Sauce: Whisk together mayonnaise, vinegar, paprika, salt and pepper. Serve with skewers for dipping.
Tip: Substitute other Spanish cheeses, such as Mahón or Roncal, if desired.
