Spicy Simply Surimi Crostini
Ingredients
1 pkg (12 oz) Simply Surimi, Stick Style
1 baguette
1/4 cup olive oil
1/4 tsp salt
1 cup baby arugula leaves
Lime wedges
Sriracha Mayonnaise
1/2 cup mayonnaise
4 tsp sriracha sauce
3 tsp fresh lime juice
1 small garlic clove, minced
1/4 tsp salt
Directions
Preheat oven to 375°F. Cut baguette on slight diagonal into 32 slices, about 1/4-inch thick; arrange on rimmed baking sheet. Brush with olive oil and sprinkle with salt; bake for 10 to 12 minutes or until golden and crispy. Let cool.
Sriracha Mayonnaise: In small bowl, stir together mayonnaise, sriracha sauce, lime juice, garlic and salt.
Cut Simply Surimi apart into bite-size pieces; fold gently into sriracha mayonnaise. Divide arugula among crostini; spoon surimi mixture over top. To serve, garnish with lime wedges.
Tip: Use micro-baby arugula if available or the smallest baby arugula leaves you can find. Alternatively, replace arugula with baby watercress leaves.
