1 pkg (12 oz) Simply Surimi, Flake Style
4 oz plain brick-style cream cheese, softened
1 cup sour cream
1 1/2 cups cooked mashed sweet potato
3/4 cup cooked bacon, crumbled and divided
1/2 cup crumbled goat cheese, divided
1/4 cup finely chopped green onion
1/4 tsp freshly ground pepper
1 baguette, thinly sliced
1 tbsp olive oil
Preheat oven to 350°F. Position racks on top and bottom thirds of oven. Beat cream cheese with sour cream until smooth; stir in sweet potato until well combined. Gently stir in surimi, 1/2 cup bacon, 1/4 cup goat cheese, green onion and pepper. Transfer to shallow baking dish; sprinkle with remaining bacon and goat cheese. Brush baguette slices with oil; arrange in single layer on baking sheet. Place baguette slices on top rack; place dip on lower rack in oven. Bake, turning baguette slices halfway through, for 12 to 15 minutes or until baguette slices are golden brown and dip is heated through and bubbling around edges. Let stand for 10 minutes.
Tip: The dip is also delicious served with vegetable chips, breadsticks, pita chips or veggie sticks.
