Simply Surimi Stick Firecrackers
2 pkg (12 oz each) Simply Surimi, Stick Style
1/2 cup mayonnaise
1/2 tsp lemon zest
1 tsp lemon juice
1 sheet frozen puff pastry, thawed
1 block Cheddar cheese (5 oz)
Preheat oven to 400°F. Combine mayo, lemon zest and juice; set aside. Place pastry sheet on lightly floured surface. Cut sheet into 8 long strips and cut each strip in half. Spread 1 tsp lemon mayonnaise over each strip; wrap strips around Simply Surimi sticks, leaving about 1/2 inch of surimi stick exposed on each end. Place seam-side down on baking sheet. Whisk egg with 1 tbsp water; brush over pastry. Bake for about 15 minutes or until golden brown. Meanwhile, slice cheese and cut into 16 stars using 1-inch star cutter. Insert toothpick into each star; poke into firecrackers.
Tip: You can cut stars out of red peppers instead of cheese slices if desired.
