Shrimp & Simply Surimi Ceviche
Ingredients
1 pkg (12 oz) Simply Surimi, Stick Style, diced
1/2 lb cooked shrimp, diced
1 red pepper, diced
1 jalapeño pepper, minced
1/2 cup diced English cucumber
1/2 cup lime juice
1/4 cup chopped fresh cilantro
Pinch each salt and pepper
Baked corn chips
Directions
In serving bowl, combine Simply Surimi, shrimp, red pepper, jalapeño, cucumber, lime juice, cilantro, salt and pepper. Toss well; let stand for 10 minutes. Serve with corn chips.
Tip: For elegant entertaining, serve ceviche in shooter glasses or Asian spoons.
